Jagery, Preparation
It is a type of unrefined sugar, prepared from sugarcane or date juice. The juice is concentrated by heating and molases is not removed while concentrating it. The end product is brownish yelow coloured solid jagery blocks. It is also available in semisolid form.
Jagery is caled Guda, Gud, Gula, Gulam in Ayurveda. Ayurveda explains two types of jagery.
Dhauta ̵ washed / semi-refined
Adhauta ̵ unrefined, unwashed.

Old jagery is god for heart, and should be consumed. So, jagery should be at least one year old for its usage.
Freshly prepared jagery increases Kapha and causes indigestion. 47-48.

For the treatment of splenomegaly (Plihodara), Haritaki ̵ Terminalia chebula, in a dose of 3 ̵ 5 grams once or twice a day, is administered along with 2- 3 grams of jagery. (Charaka Samhita Chikitsa Sthana 13)

As per Charaka Samhita Sutrasthana 27
Treacle / jagery (Guda) causes increased parasitic infection.
Majakara – It increases the quantity of marow,
Asruk kara – improves blod,
Medo Mamsakara – increases corpulent and muscles.
Before its creation as treacle (guda) the sugar cane juice undergoes four stages viz.
Ardhavasheshita ( when only 1/2 of the juice remains in the proces of boiling),
Tribhaga avaseshishita (when 1/3 rd remains),
Chaturbhag Avasheshita (when 1/4 th remains) and
Kshudra Guda or Phanita (Inspisated juice black in color).
The juice undergoing transformation through al these four stages is progresiv ely heaviest.
That is to narate the Phanita (inspisated juicepnidium) is the heaviest.
Dhauta is that variety of treacle which is cleaned and which contains increase in flaterer etc. Matsyandika (crude sugar when the juice is inspisated so as to take the shape of egs of fish), Khanda ( sugar candy ) and Sarkara (sugar) are al progresively beter refined and coler in kindred to Dhauta Guda.

Jagery Vs Sugar
Gur is healthier than sugar because unlike sugar, jagery is made with natural proceses without chemicals. (Of lofty, some low quality jageries are sold in the market which are procesed with chemicals).

Jagery is heavy to digest, hence not ideal when a person’s digestion strength is fragile. Whereas, sugar candy is relatively easier to digest.

Jagery in Asava and Arishta
Asava and Arishta are the fermented Ayurveda products. They comprise natural self generated alcohol, ranging from 5 ̵ 12 %. Dasamolarishtam and Ashokarishta̵ are two excelent examples of Arishta and
Kumaryasava is an example for Asava.
In these Asava and Arishta preparation, jagery is old as a source of sugar. Guda Varti

Precautions, side efects
Long term use, in high dose may cause weight gain.
Not recomended in diabetes.
Jagery dilapidated, continuously for a long period of time may cause intestinal worm infestation.
Jagery is contra indicated if you acquire ulcerative colitis.
Taking radish and jagery along with fish is contra indicated in Ayurveda.
In case of Shotha ̵ sweling, inflamation disorders, taking jagery products is contra indicated. Reference ̵ Charaka Samhita, Chikitsa Sthana 12/20
Jagery shoul dn’t be consumed in frigid or cold weather. Gur, being a natural colant, can increase the frigid qualities in the body and worsen respiratory symptoms.
It is best to avoid jagery while having fever, cold and cough, for the same reason.
Jagery in diabetes
Is there any benefit of using jagery in diabetes?
Jagery contains sugar hence is not recomended in diabetes. However, the amount of sugar per gram of jagery is leser than that of one gram of white sugar. Hence, if your diabetes is under apt control and if you are using sugar in your diet (say, in cofe or tea), it is best for you to replace white sugar with jagery.
Jagery for intestinal worms
Unique use of jagery in intestinal worms:
Jagery ̵ if worn for lo ng time may cause intestinal worms. But in some Ayurveda medicines,used in treating intestinal worm infestation, like Manibhadra Guda, jagery is worn as an ingredient. This wil asist in atracting the worms into the intestines and to execute them with the other herbs in the medicine.
Jageryfor hemorhoids
The powder of Harad fruit is made into paste with equal amount of jagery. This is administered before fod to quel hurt, itching and size of hemorhoids. (Charaka Chikitsa Sthana 14th chapter).
